Hello! I hope everyone had a Happy Easter!

I had a nice and productive weekend. Took our husky to a self serve dog wash and groomed her for 2 hours on Saturday! She was shedding pretty bad. And Sunday, besides the basic household chores, took all 3 dogs for a nice mile long walk. I also found these meal prep recipes while browsing on Facebook, so I decided to try one of them Sunday evening before cooking dinner.

I love breakfast! I love everything about it! If I had the time every morning I would totally cook myself some pancakes and eggs. But in reality, I only have the time weekend mornings. So when I saw this breakfast burrito meal prep recipe I was excited because it had everything in it that I would eat for breakfast. Another win, was that it would get my boyfriend eating breakfast!

The preparation was fairly easy; I don't cook often enough and I've really only started cooking this year, so it may have taken me longer than most to prepare such ingredients. 

Using the recipe I found on Facebook, I was able to make 10 breakfast burritos with some left over potatoes, bell peppers, onion and sausage. I also found it easier to warm up the tortilla for about 20 seconds in the microwave to wrap the ingredients. The tortilla didn't break and it was more forgiving (I'm not at all the best burrito wrapper...)

I think this is a great on-the-go breakfast. Just grab one, re-wrap the burrito in a damp paper towel and microwave it for 2 minutes! Eat one on your commute to work, school, or wherever you may need to be or eat one whenever you feel like it! 

Since these can be stored up to 1 month in the freezer, I'll be making these again when we finish them! If you know any other meal prep recipes let me know, I'd love to try new ones since I'm new in the cooking game :)
